Wow, Rojo's. Had no idea it was there, but count me in for plant-based Mexican.
When it comes to this niche category, I'm already a fan of:
* El Borracho on First Avenue next to Pike Place Market
* The Tierra Madre food stand on game days at Lumen Field.
Kinda mind-blowing to think I now have three options. (Still missing the Ballard El Borracho.)
Made my way to Rojo's today. Wasn't sure what to expect. Was utterly blown away. The flavors, the smells, the textures. Hey, the sounds even--Bad Bunny came up on their refreshing Latin pop playlist. Just had what might have been the greatest lunch I have ever had in my life. Not like I keep track of such things, so don't take that as a scientific assertion. 🤓
Oh, and uncannily affordable too. Rojo’s Mexican Food is the sort of restaurant that is so transcendent, if I weren't already living in Seattle, it would make me want to move here.
Dude, you’re a fucking idiot, just stop.

The price of the dish in the header is in fact $17 for the small version. $23 for the large version.
Yeah, go ahead and caramelize some fish sauce in your home Biped. It smells amazing lol. Let me know how it goes.
